Plitvice from Split, Zadar or Zagreb: Which Base?

Split is where most people set out from, simply because it's where most people are, and there are plenty of day tours. But weigh the distance carefully: Plitvice is about two and a half to three hours each way from Split, so a day trip is a twelve-hour affair with five to six hours in the vehicle, and you arrive around the midday crowds. It works, and a good included-entry tour makes it smooth, but it's a big day for a park you'll walk for only four to six hours.
From Zadar: the closest base
If you have any flexibility, Zadar is the smart choice. The closest major hub to Plitvice, it's only about 1.5 to 2 hours away, which turns the same day trip into something far less punishing — more time in the park, less on the road, and an easier early start to beat the crowds. Zadar is also a lovely coastal city in its own right, so basing a couple of nights there and doing Plitvice from it is one of the best-value plans in Croatia.
From Zagreb: easy and en route
Coming from or heading to the capital, Zagreb is about two hours from Plitvice by road, and the park sits naturally on the route between Zagreb and the coast. That makes it easy to fold into a journey rather than treat as a round trip — many people visit Plitvice on the drive down to the Dalmatian coast, or on the way back up. Day tours run from Zagreb too, if you'd rather not drive.
Or stay at the gate
The option experienced visitors quietly recommend is to skip the day trip altogether and stay a night close to the park. There's a cluster of hotels and guesthouses within minutes of the entrances, and being there means you can walk in as the gates open, ahead of every bus, when the boardwalks are empty and the morning light is on the water. It costs a night's accommodation, but for the difference it makes to the experience, it's the single best upgrade you can buy at Plitvice.
